
Source Material: Ever had one of those days when all you wanted to do was go home eat a Tylenol PM, drink a glass of wine, and watch some Netflix?
That pretty much sums up my day today. After reviewing the gastronomical wisdom of my first dinner choice, I decided that what I really wanted was a cheeseburger, weight watcher points be damned! After a few more minutes of reflection, I decided that I could probably make a pretty awesome (well, awesomest really) Cheeseburger Salad.
Modifications: This recipe is quite flexible based on personal tastes. I tried to keep mine pretty traditional; I'm mean, why mess with a good thing?
Awesomest Cheeseburger Salad (Ever!)
2 cups of lettuce mix (I prefer a mix of romaine and butter or bib lettuce)
1/4 cup of red onion, chopped
3/4 cup of grape tomatoes, halved
1/2 cup of extra sharp cheddar cheese, small cubes
1/4 cup of bread and butter pickles, diced (I used sugar free)
1/4 cup of cooked bacon, chopped
1/2 cup of brown ground beef, crumbled (seasoned with steak seasoning)
I tossed everything together then dressed with a couple squirts of reduced sugar Ketchup and mayo.
